Paleo Almond Joy Cookies

Happy Mother's Day to all the wonderful mothers out there.  I've been doing so well staying Paleo and today I was craving a little sweetness on Mother's Day.  These cookies turned out so delicious that I had to share them with you.  You can easily double this but since I really don't want them hanging around for long, I made this version.



Paleo Almond Joy Cookies

1 1/4 cup almond flour (I use Trader Joe's)
1/4 tsp salt (I use sea salt)
1/4 tsp baking soda
1/4 cup coconut oil, melted
2 tsp vanilla
1/4 cup pure maple syrup (room temperature), honey or agave (I use syrup)
1/2 cup dark chocolate chips


Preheat oven to 350 degrees.  Mix dry ingredients in a medium bowl.  Mix wet ingredients in a small bowl.  Mix wet into dry until combined.  I use a spoon for all my mixing.  Fold in chocolate chips.  Take a taste, it's yummy raw!  Drop by the spoonful onto parchment paper lined cookie sheets.  Flatten slightly.  Bake for 10-12 minutes.  Enjoy!
